Banana Pancake-Omelette
Banana Pancake Omelette
Serves 1 (or double ingredients for 2)
GF / DF* / V
Ingredients:
1 x Small banana
2 x Eggs
Then I like to add:
1/2 tsp Cinnamon
1/4 – 1/2 tsp Turmeric
Sprinkle Pepper (*pepper is needed to get the anti-inflammatory benefits of turmeric)
Method:
1. Mash banana thoroughly (fork / thermomix / blender)
2. Whisk in the eggs (and spices if using
3. Heat a little oil in a frypan (I prefer coconut oil)
4. Fry as two small pancakes or one big pancake – you can even try flipping them once you get the consistency right!
Serving Ideas / Optional Extras on top:
– Dollop of Natural/ Greek Yoghurt (Coconut for DF*)
– 1 x Tbs Protein powder
– Chopped Mixed nuts/seeds (activated if possible!)
– Chopped fruit: eg Mango / Mandarin / Orange / Apple / Kiwi
– Freshly ground linseed / flaxseed
– Drizzle of Honey/ Maple Syrup / Rice Syrup or Dried fruits
– Vital Greens powder / Spirulina
– Maca powder
– Freshly cut mint leaves
– Add a dash of Vanilla essence before blending

We all know that Bananas and Blueberries are both SUPER healthy foods and a delicious combo…
but did you know that it’s best NOT to eat them together?
Turns out that bananas contain polythene oxidase – a compound which degrades polyphenols (which is the good stuff we want from our blueberries!)
So if I eat banana in the morning, I’ll keep my blueberries until later in the day, and vice versa!
But don’t worry, if you still like to eat them together it’s ok. you just won’t be getting the maximum nutritional kick
